🍽️ Steamed Cod with Spinach and Vegetables

Ingredients
- 4 cod fillets (160 g each)
- 2 untreated lemons (zest and juice, preferably organic)
- 600 g fresh spinach
- 300 g green beans
- 4 small corn cobs (from the can)
- salt
- pepper (from the mill)
- olive oil (cold-pressed)
Instructions
- 1. Rinse the cod fillets under running water and pat them dry gently with a kitchen towel. Then drizzle 4 tablespoons of lemon juice over them.
- 2. Wash the spinach and remove any tough stems. Heat 2 tablespoons of oil in a large pot over medium heat and add the spinach. Let it wilt until soft. Season with salt and pepper.
- 3. Trim the beans and wash them thoroughly. Boil them in plenty of salted water for about 8 minutes (blanching means cooking briefly in boiling water). Remove them from the water and let them drain. Also drain the corn cob.
- 4. Fill some water into a steamer pot and stir in the remaining lemon juice. Place the fish in the steamer insert of the pot. Steam the fish over medium heat for about 8 minutes with the lid on until cooked through. Season with salt and pepper afterwards.
- 5. Plate the fillets. Place the beans, spinach, and a portion of the corn cob alongside. Drizzle everything with 2 tablespoons of oil and sprinkle lemon zest over it. Serve the dish immediately. Fresh, crispy white bread pairs perfectly with it.
