🍽️ Crispy Fish Burgers with Fresh Spinach

Ingredients
- 4 cod fillets (100 g each)
- 2 tbsp lemon juice
- 2 handfuls young leaf spinach
- 4 small burger buns (with sesame)
- 2 tbsp vegetable oil
- 1 tsp butter
- salt
- white pepper (from the mill)
- flour (for dredging)
- 3 tbsp mayonnaise
Instructions
- 1. Rinse the pollack fillets under running water.
- 2. Pat the fillets dry with a kitchen towel.
- 3. Drizzle the fish fillets with lemon juice.
- 4. Remove woody stems and dirty leaves from the spinach.
- 5. Wash the spinach thoroughly.
- 6. Spin the spinach dry.
- 7. Slice the burger buns horizontally.
- 8. Lightly toast the bun halves.
- 9. Heat oil and butter in a frying pan.
- 10. Pat the fish fillets dry again before frying.
- 11. Season the fillets with salt and pepper.
- 12. Coat the fillets lightly in flour.
- 13. Fry the fish fillets in the hot fat until golden brown.
- 14. Fry the fillets for about 3 to 4 minutes on each side.
- 15. Spread mayonnaise on the bottom half of the burger buns.
- 16. Place some fresh spinach leaves on the buns.
- 17. Place one fried fish fillet on top of the spinach.
- 18. Add a bit more mayonnaise on top of the fish fillet.
- 19. Cover the fish fillet with the remaining spinach leaves.
- 20. Place the top half of the burger bun on top.
- 21. Serve the burgers immediately while warm.
