  1. 1. Rinse the pollack fillets under running water.
  2. 2. Pat the fillets dry with a kitchen towel.
  3. 3. Drizzle the fish fillets with lemon juice.
  4. 4. Remove woody stems and dirty leaves from the spinach.
  5. 5. Wash the spinach thoroughly.
  6. 6. Spin the spinach dry.
  7. 7. Slice the burger buns horizontally.
  8. 8. Lightly toast the bun halves.
  9. 9. Heat oil and butter in a frying pan.
  10. 10. Pat the fish fillets dry again before frying.
  11. 11. Season the fillets with salt and pepper.
  12. 12. Coat the fillets lightly in flour.
  13. 13. Fry the fish fillets in the hot fat until golden brown.
  14. 14. Fry the fillets for about 3 to 4 minutes on each side.
  15. 15. Spread mayonnaise on the bottom half of the burger buns.
  16. 16. Place some fresh spinach leaves on the buns.
  17. 17. Place one fried fish fillet on top of the spinach.
  18. 18. Add a bit more mayonnaise on top of the fish fillet.
  19. 19. Cover the fish fillet with the remaining spinach leaves.
  20. 20. Place the top half of the burger bun on top.
  21. 21. Serve the burgers immediately while warm.
