🍽️ British-style Fish Burgers with Red Cabbage Slaw

Ingredients
- 300 g red cabbage
- 1 tbsp lemon juice
- 2 tbsp mayonnaise
- 4 tbsp sour cream (min. 10% fat content)

- pepper (from the mill)
- 4 burger buns
- 1 spring onion
- 280 g thick fish fillet (4 thick fish fillets; e.g. pollock or cod fillet)
- a splash of lemon juice

- 1 egg
- 4 tbsp breadcrumbs
- ghee (for frying)
- lemon wedges (for serving)
Instructions
- 1. Wash the red cabbage thoroughly.
- 2. Remove the hard core in the center.
- 3. Cut the leaves into thin strips or use a slicer.
- 4. Place the red cabbage in a bowl.
- 5. Add the lemon juice.
- 6. Add the mayonnaise.
- 7. Add the sour cream.
- 8. Mix everything well together.
- 9. Season the mixture with salt.
- 10. Season the mixture with pepper.
- 11. Place the bowl in the refrigerator for 30 minutes.
- 12. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 13. Slice the buns in half horizontally.
- 14. Place the bun halves on a baking tray.
- 15. Toast the buns in the oven until golden brown.
- 16. Wash the spring onions.
- 17. Slice the spring onions into thin rings.
- 18. Wash the fish fillets.
- 19. Pat the fish fillets dry with kitchen paper.
- 20. Drizzle the fish fillets with a little lemon juice.
- 21. Season the fish fillets with salt.
- 22. Season the fish fillets with pepper.
- 23. Beat the egg in a shallow bowl.
- 24. Coat the fish fillets in the beaten egg.
- 25. Place the breadcrumbs on a plate.
- 26. Coat the fish fillets in the breadcrumbs.
- 27. Press the breadcrumbs on firmly.
- 28. Heat ghee in a frying pan.
- 29. Place the fish fillets in the hot pan.
- 30. Fry the fish fillets on the first side for 3 to 4 minutes.
- 31. Turn the fish fillets over.
- 32. Fry the fish fillets on the second side for 3 to 4 minutes.
- 33. Take the bun halves out of the refrigerator.
- 34. Place the red cabbage slaw on the bottom bun halves.
- 35. Place the fried fish fillets on the slaw.
- 36. Sprinkle the spring onion rings over the burgers.
- 37. Place the top bun halves on top.
- 38. Cut lemons into wedges.
- 39. Serve the burgers with the lemon wedges.
