  2. 2. Dice the shallot and the garlic into very small cubes.
  3. 3. Heat butter in a pan.
  4. 4. Sauté the shallots and garlic in the hot butter until they are soft and translucent.
  5. 5. Remove the pan from the heat.
  6. 6. Let the shallots and garlic cool down completely.
  7. 7. Rinse the fish under running water.
  8. 8. Pat the fish dry with a kitchen towel.
  9. 9. Cut the fish into coarse cubes.
  10. 10. Process the fish in a food processor or chopper.
  11. 11. Make sure not to process the fish mixture too finely.
  12. 12. Mix the fish with the egg.
  13. 13. Add finely chopped rosemary to the fish-egg mixture.
  14. 14. Add the cooled shallots and garlic to the mixture.
  15. 15. Add breadcrumbs gradually.
  16. 16. Stir until the mixture is firm enough to shape well.
  17. 17. Season the fish mixture with salt.
  18. 18. Add a little lemon juice.
  19. 19. Season with black pepper.
  20. 20. Shape eight small, round patties from the mixture.

  23. 23. Fry the fish patties on the first side for four to five minutes until golden brown.

  25. 25. Fry the fish patties on the second side for another four to five minutes until golden brown.

  27. 27. Take a spoonful of sour cream into a bowl.
  28. 28. Stir the sour cream until smooth.
  29. 29. Fold one to two tablespoons of caviar into the sour cream.
  30. 30. Season the caviar sour cream with a little salt.
  31. 31. Season the cream with a little pepper.
  32. 32. Cut fresh chives into small rings.
  33. 33. Garnish the fish patties with the chives.
  34. 34. Serve the fish patties together with the caviar chive cream.
