🍽️ Oven Casserole with Cod, Zucchini, and Cherry Tomatoes

Ingredients
- 300 g young green beans
- salt
- 2 zucchini
- pepper
- 2 tbsp olive oil
- 250 g cocktail tomatoes
- 600 g cod fillet (kitchen-ready)
- 1 splash vegetable broth
- 2 sprigs parsley
Instructions
- 1. Wash the beans thoroughly.
- 2. Remove the hard ends and strings from the beans.
- 3. Bring water to a boil and add some salt.
- 4. Cook the beans in this salted water for about 10 minutes.
- 5. Wash the zucchini under running water.
- 6. Cut off the hard ends of the zucchini.
- 7. Slice the zucchini into round slices.
- 8. Place the zucchini slices in a baking dish.
- 9. Season the zucchini with salt and pepper.
- 10. Drizzle one tablespoon of olive oil over the zucchini.
- 11. Preheat the oven to 220 degrees (convection 200 degrees or gas level 3 to 4).
- 12. Place the baking dish on the middle rack of the oven.
- 13. Bake the zucchini for about 5 minutes until golden brown.
- 14. Remove the beans from the cooking water.
- 15. Rinse the beans with cold water to stop the cooking process.
- 16. Let the beans drain well.
- 17. Wash the cherry tomatoes under running water.
- 18. Remove the green stems from the tomatoes.
- 19. Rinse the cod under cold water.
- 20. Pat the fish dry with a kitchen towel.
- 21. Cut the cod into four equal pieces.
- 22. Take the baking dish with the zucchini out of the oven.
- 23. Turn the zucchini slices so they brown evenly.
- 24. Pour vegetable broth over the zucchini.
- 25. Distribute the cherry tomatoes and beans over the zucchini.
- 26. Place the fish pieces on top of the vegetables.
- 27. Season everything again with salt and pepper.
- 28. Drizzle the remaining olive oil over the casserole.
- 29. Place the dish back in the preheated oven.
- 30. Bake the casserole for another 8 to 10 minutes on the middle rack.
- 31. Wash the parsley under running water.
- 32. Shake the parsley dry.
- 33. Chop the parsley finely.
- 34. Sprinkle the parsley over the finished casserole.
