🍽️ Grilled Sardines, Shrimp, and Cod

Ingredients
- 12 medium-sized sardines (ready for cooking)
- 1 clove of garlic
- 1 chili pepper
- 100 ml olive oil
- salt
- freshly ground pepper
- 1 tbsp sage (coarsely chopped)
- 1 tbsp rosemary (coarsely chopped)
- 1 tbsp thyme (coarsely chopped)
- 12 large shrimp (in the shell)
- 2 cloves of garlic
- 1 bunch flat-leaf parsley
- 2 oregano sprigs
- 125 ml olive oil
- 1 lemon (use the juice)
- 500 g red snapper fillet
- salt
- pepper (from the mill)
- 1 lemon (use the juice)
- 2 tbsp basil (finely chopped)
- 2 shallots
- 2 tomatoes
- 2 tbsp olive oil
Instructions
- 1. Rinse the sardines thoroughly and pat them dry with a kitchen towel.
- 2. Finely chop the garlic cloves and the chili pepper.
- 3. Mix the chopped vegetables with the oil.
- 4. Season the oil mixture with salt and pepper.
- 5. Pour the oil mixture over the sardines.
- 6. Sprinkle the herbs over the sardines.
- 7. Let the sardines marinate for at least one hour.
- 8. Turn the sardines occasionally during the marinating time.
- 9. Wash the large shrimp and remove the heads.
- 10. Halve the tails of the shrimp lengthwise.
- 11. Remove the vein from the shrimp.
- 12. Finely chop the garlic, parsley, and oregano.
- 13. Mix the chopped herbs with the oil and lemon juice.
- 14. Pour the marinade over the shrimp.
- 15. Let the shrimp marinate for about thirty minutes.
- 16. Wash the cod fillet and pat it dry.
- 17. Cut the cod into six equal pieces.
- 18. Season the fish pieces with salt and pepper.
- 19. Drizzle the fish pieces with lemon juice.
- 20. Finely chop the basil.
- 21. Peel the shallots.
- 22. Dice the shallots finely.
- 23. Blanch the tomatoes with boiling water.
- 24. Remove the skin from the tomatoes.
- 25. Cut the tomatoes into small cubes.
- 26. Mix the tomato cubes with the other ingredients.
- 27. Brush six pieces of aluminum foil with oil.
- 28. Place the fish pieces on the aluminum foil.
- 29. Top the fish pieces with the tomato mixture.
- 30. Wrap the fish pieces loosely in the aluminum foil.
- 31. Grill the sardines on the hot grill surface.
- 32. Grill the sardines for three to five minutes per side.
- 33. Grill the shrimp on the shell side.
- 34. Grill the shrimp for four to six minutes on the shell side.
- 35. Grill the shrimp on the flesh side.
- 36. Grill the shrimp for no more than two minutes on the flesh side.
- 37. Cook the cod on the grill.
- 38. Cook the cod for about six minutes.
