🍽️ Oven-Baked Fish with Fresh Herb Tomato Sauce

Ingredients
- 100 ml dry white wine
- 2 handfuls fresh herbs (e.g. parsley, cilantro and chives)
- 4 fish fillets approx. 160 g each (e.g. turbot, cod)
- salt
- pepper
- 200 g cherry tomatoes
- 2 tbsp olive oil
Instructions
- 1. Turn on the oven and set it to 180 degrees Celsius using the top and bottom heat setting.
- 2. Pour the wine into a suitable baking dish.
- 3. Rinse the fresh herbs briefly under running water.
- 4. Shake the herbs dry.
- 5. Gently pluck the leaves from the stems.
- 6. Chop the herb leaves coarsely.
- 7. Rinse the fish under cold water.
- 8. Pat the fish completely dry with a kitchen towel.
- 9. Season the fish with salt and pepper.
- 10. Toss the fish in the chopped herbs so that it is covered all over.
- 11. Place the coated fish into the baking dish with the wine.
- 12. Arrange the washed tomatoes around the fish in the dish.
- 13. Drizzle the entire dish with olive oil.
- 14. Place the dish in the oven and bake the ingredients for about 15 minutes.
- 15. Taste the finished dish at the end and adjust the seasoning with salt and pepper.
- 16. Plate the fish along with the tomatoes.
- 17. Serve the dish with potatoes if desired.
