🍽️ Crispy Fish with Homemade Tartar Sauce and Fries

Ingredients
- 1 kg potatoes (medium, waxy)
- 1.5 l frying oil
- salt
- pepper
- 700 g fish fillet
- 1 egg
- 4 tbsp breadcrumbs
- lemons
- 2 hard-boiled eggs
- 1 shallot
- 2 small gherkins (with brine)
- 2 tbsp capers
- 4 tbsp mayonnaise
- 2 tbsp yogurt
- 1 clove of garlic
- 1 bunch chives
- salt
- pepper
Instructions
- 1. Peel the shallot and dice it very finely.
- 2. Peel the boiled eggs.
- 3. Finely chop the eggs, the pickles, and the capers.
- 4. Whisk the mayonnaise and yogurt together in a bowl.
- 5. Fold in the shallot, the chopped eggs, the pickles, and the capers into the mayonnaise-yogurt mixture.
- 6. Season the sauce with one to two tablespoons of pickle brine, salt, and pepper.
- 7. Peel the garlic clove and press it directly into the sauce.
- 8. Wash the chives and cut them into small rings.
- 9. Stir the chive rings into the finished sauce.
- 10. Preheat the deep fryer to 165 degrees Celsius.
- 11. Alternatively, heat oil in a large pot.
- 12. Check the oil temperature by dipping the end of a wooden spoon handle into the oil.
- 13. The oil is ready when small bubbles rise around the spoon handle.
- 14. Wash the potatoes thoroughly.
- 15. Peel the potatoes.
- 16. Cut the potatoes lengthwise into sticks.
- 17. Dry the potato sticks well.
- 18. Add the potato sticks in batches to the hot oil.
- 19. Fry the potatoes for about five minutes until they are soft.
- 20. Remove the potatoes while they have not yet taken on any color.
- 21. Let the potatoes drain in a sieve.
- 22. Increase the deep fryer temperature to 190 degrees Celsius.
- 23. Add the potatoes again in batches to the hot oil.
- 24. Fry the potatoes for about two minutes until they are crispy.
- 25. Remove the finished fries and let them drain well.
- 26. Sprinkle the fries with salt immediately.
- 27. Serve the fries immediately.
- 28. Cut the fish fillets into bite-sized pieces.
- 29. Salt and pepper the fish pieces.
- 30. Drizzle the fish with lemon juice.
- 31. Whisk one egg with one teaspoon of water on a plate.
- 32. Place the breadcrumbs on a shallow plate.
- 33. Roll the fish pieces first in the egg mixture.
- 34. Then roll the fish pieces in the breadcrumbs.
- 35. Fry the breaded fish pieces in batches at 180 degrees Celsius until golden yellow.
- 36. Serve the fish with the tartar sauce and the fries.
