🍽️ Fish and Seafood Gratin with Pastry Lid

Ingredients
- 500 g cod fillet (kitchen-ready, skinless)
- 200 g shrimp (peeled and deveined)
- 2 shallots
- 1 garlic clove
- 100 g mushrooms
- 1 zucchini
- 2 tomatoes
- 2 tbsp olive oil
- 100 ml dry white wine
- 200 ml fish stock
- 1 tbsp cornstarch
- 2 tbsp freshly chopped parsley
- salt
- pepper (from the mill)
- 250 g flour
- 3 tsp baking powder
- 0.5 tsp salt
- 50 g soft butter
- 150 ml milk
- 75 g freshly grated cheese (e.g. Gouda)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Rinse the fish under running water and pat it dry with a kitchen towel.
- 3. Cut the fish into small cubes.
- 4. Rinse the prawns and pat them dry as well.
- 5. Peel the shallots and the garlic.
- 6. Finely chop the shallots and the garlic.
- 7. Clean the mushrooms and remove any dirty spots.
- 8. Cut the mushrooms into cubes.
- 9. Wash and trim the zucchini.
- 10. Cut the zucchini into cubes.
- 11. Wash the tomatoes.
- 12. Quarter the tomatoes.
- 13. Remove the core of the tomatoes.
- 14. Cut the tomatoes into small cubes.
- 15. Heat oil in a pan.
- 16. Sauté the shallots and garlic in the hot oil.
- 17. Add the mushrooms, zucchini, and tomatoes to the pan.
- 18. Deglaze the mixture with white wine.
- 19. Add the fish stock.
- 20. Bring the sauce to a boil.
- 21. Mix cornstarch with cold water until dissolved.
- 22. Add the starch mixture to the sauce to thicken it.
- 23. Continue cooking the sauce until it is creamy.
- 24. Remove the pan from the heat.
- 25. Finely chop the parsley.
- 26. Fold the parsley into the sauce.
- 27. Add the cubed fish to the sauce.
- 28. Add the prawns to the sauce.
- 29. Mix everything well together.
- 30. Season the filling with salt and pepper.
- 31. Pour the mixture into a baking dish.
- 32. Put the flour in a bowl.
- 33. Add the baking powder to the flour.
- 34. Add a pinch of salt to the flour.
- 35. Add the butter to the flour.
- 36. Add milk gradually.
- 37. Knead the dough until it is pliable.
- 38. Ensure the dough no longer sticks to your hands.
- 39. Dust a work surface with flour.
- 40. Roll out the dough on the floured surface.
- 41. Ensure the dough is about 1.5 centimeters thick.
- 42. Cut circles with a diameter of about 3 centimeters from the dough.
- 43. Brush the dough circles with a little milk.
- 44. Place the dough circles on the cobbler in the dish.
- 45. Sprinkle cheese over the dough circles.
- 46. Place the dish in the preheated oven.
- 47. Bake the dish for about 30 minutes.
- 48. Bake until the pastry is golden brown.
