🍽️ Fish in Lime Packets

Ingredients
- 960 g fresh trout fillet (e.g. salmon trout; 8 fresh trout fillets)
- 3 limes
- 6 tbsp chili sauce
- 3 tbsp soy sauce
- pepper
- 6 sprigs cilantro
Instructions
- 1. Rinse the fish fillets under cold water.
- 2. Pat the fillets dry with a kitchen towel.
- 3. Cut four squares from baking paper, each 40 by 40 centimeters in size.
- 4. Place two fillets side by side on each paper square.
- 5. Fold the paper loosely into an open-top packet.
- 6. Tie the open ends of the packets securely with kitchen twine.
- 7. Place the finished fish packets onto a baking sheet.
- 8. Wash the limes thoroughly with hot water and dry them.
- 9. Finely grate the zest from two limes.
- 10. Slice the two limes into thin rounds.
- 11. Squeeze the third lime.
- 12. Pour the lime juice into a small bowl.
- 13. Add the lime zest, chili sauce, soy sauce, and pepper to the bowl with the juice.
- 14. Stir the ingredients well.
- 15. Brush the trout fillets with the lime mixture.
- 16. Place the lime slices on top of the fillets.
- 17. Preheat the oven to 180 degrees (convection 160 degrees or gas mark 2-3).
- 18. Place the baking sheet on the middle rack.
- 19. Bake the packets for about 15 minutes.
- 20. Wash the coriander under cold water.
- 21. Shake the coriander dry.
- 22. Pluck the small coriander leaves from the stems.
- 23. Take the fish packets out of the oven.
- 24. Sprinkle the coriander leaves over the fillets.
- 25. Serve the dish immediately.
