🍽️ Crispy Fish and Potato Pan with Bacon

Ingredients
- 500 g firm-cooking potatoes
- salt
- 500 g white fish fillet (e.g. cod)
- 1 onion
- 120 g smoked belly bacon (in cubes)
- 20 g butter
- pepper (from the mill)
- 2 tbsp freshly chopped parsley
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Bring water to a boil and add some salt.
- 3. Cook the potatoes in the salted water for about 20 minutes.
- 4. Drain the potatoes and rinse them with cold water to cool them down.
- 5. Peel the cooled potatoes.
- 6. Let the potatoes cool down completely.
- 7. Wash the fish.
- 8. Pat the fish dry with a kitchen towel.
- 9. Cut the fish into bite-sized pieces.
- 10. Peel the onion.
- 11. Cut the onion into fine cubes.
- 12. Put the bacon in a pan and let the fat render slowly.
- 13. Add some butter to the bacon fat.
- 14. Add the onion cubes to the pan.
- 15. Sauté the onions until they are translucent.
- 16. Slice the cooled potatoes.
- 17. Add the potato slices to the onion in the pan.
- 18. Fry the potatoes until golden brown, turning them occasionally.
- 19. Add the fish pieces to the pan.
- 20. Fry the fish pieces until golden brown, turning them gently.
- 21. Season the dish with salt and pepper.
- 22. Finely chop fresh parsley.
- 23. Sprinkle the finished pan with the parsley.
- 24. Serve the dish immediately.
