  1. 1. Rinse the grape leaves under running water.
  2. 2. Place the grape leaves in hot water for about 15 minutes to reduce the strong salty taste.
  3. 3. Wash the trout and pat them dry with a kitchen towel.
  4. 4. Wash two lemons in hot water and slice them thinly.
  5. 5. Squeeze the juice from the remaining lemons.
  6. 6. Mix the lemon juice with four to five tablespoons of oil.
  7. 7. Season the oil-lemon mixture with salt and pepper.
  8. 8. Brush the trout inside and out with the marinade.
  9. 9. Rinse the thyme.
  10. 10. Set aside a little thyme for garnishing.
  11. 11. Fill the fish cavities with the remaining thyme and two to three lemon slices each.
  12. 12. Let the grape leaves drain well.
  13. 13. Wrap each trout in two to three grape leaves.
  14. 14. Grill the wrapped trout.
  15. 15. Serve the finished trout with the remaining lemon slices and thyme.
