  1. 1. Preheat the oven to 200 degrees Celsius fan-forced.
  2. 2. Rinse the fish fillets briefly and pat them dry with a kitchen towel.
  3. 3. Place the fillets on four pieces of baking paper, each approximately 30 by 30 centimeters in size.
  4. 4. Rinse the parsley, shake it dry, and pluck the leaves from the stems.
  5. 5. Roughly chop the parsley leaves.
  6. 6. Drizzle the fish fillets lightly with balsamic vinegar.
  7. 7. Sprinkle salt over the fish and season with black pepper.
  8. 8. Brush the fish with a little olive oil.
  9. 9. Scatter the chopped parsley over the fillets.
  10. 10. Rinse the tomatoes and place them on the fillets with the stems attached.
  11. 11. Season the tomatoes lightly with salt and pepper.
  12. 12. Fold the baking paper into a packet around the fish.
  13. 13. Tie the packet together with kitchen twine or secure it with toothpicks.
  14. 14. Place the fish packets on a baking sheet.
  15. 15. Bake the packets in the oven for 15 minutes.
  16. 16. Remove the packets from the oven.
  17. 17. Carefully open the baking paper.
  18. 18. Serve the fish directly from the packet.
