🍽️ Fish packets baked in the oven

Ingredients
- 4 fish fillets (approx. 180 g each, e. g. pollock)
- 2 handfuls parsley
- 1 tbsp white balsamic vinegar
- coarse sea salt
- pepper
- 1 tbsp olive oil
- 500 g cocktail tomatoes (on the vine)
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan-forced.
- 2. Rinse the fish fillets briefly and pat them dry with a kitchen towel.
- 3. Place the fillets on four pieces of baking paper, each approximately 30 by 30 centimeters in size.
- 4. Rinse the parsley, shake it dry, and pluck the leaves from the stems.
- 5. Roughly chop the parsley leaves.
- 6. Drizzle the fish fillets lightly with balsamic vinegar.
- 7. Sprinkle salt over the fish and season with black pepper.
- 8. Brush the fish with a little olive oil.
- 9. Scatter the chopped parsley over the fillets.
- 10. Rinse the tomatoes and place them on the fillets with the stems attached.
- 11. Season the tomatoes lightly with salt and pepper.
- 12. Fold the baking paper into a packet around the fish.
- 13. Tie the packet together with kitchen twine or secure it with toothpicks.
- 14. Place the fish packets on a baking sheet.
- 15. Bake the packets in the oven for 15 minutes.
- 16. Remove the packets from the oven.
- 17. Carefully open the baking paper.
- 18. Serve the fish directly from the packet.
