🍽️ Crispy Trout in Puff Pastry

Ingredients
- 1 salmon trout (approx. 700g)
- 1 tbsp lemon juice
- salt
- pepper
- 450 g frozen puff pastry
- 1 bunch parsley
- 50 g butter
- 1 egg yolk
- 2 tbsp milk
- 200 g crème fraîche
- 1 tsp mustard
- 1 tsp horseradish
- fat (for the baking sheet)
- salad leaves (for decorating)
Instructions
- 1. Rinse the trout thoroughly and pat it dry with a kitchen towel.
- 2. Drizzle lemon juice over the entire surface of the fish.
- 3. Season the fish inside and out with salt and pepper.
- 4. Let the puff pastry thaw at room temperature.
- 5. Wash the parsley and shake it dry.
- 6. Finely chop the parsley.
- 7. Melt the butter in a small pan.
- 8. Mix the melted butter with the chopped parsley.
- 9. Brush the trout inside and out with the parsley butter.
- 10. Preheat the oven to 200 degrees Celsius.
- 11. Sprinkle some flour on a work surface.
- 12. Roll out the puff pastry thinly.
- 13. Place the trout on the pastry.
- 14. Wrap the pastry completely around the fish.
- 15. Set aside about a quarter of the remaining pastry for decoration.
- 16. Seal the pastry seams with a little water.
- 17. Whisk the egg yolk with the milk.
- 18. Brush half of the wrapped trout with the egg yolk and milk mixture.
- 19. Cut out small circles with a diameter of about 5 cm from the remaining pastry.
- 20. Place the pastry circles on the trout in a scale-like pattern.
- 21. Brush the pastry circles with the remaining egg yolk and milk mixture.
- 22. Grease a baking sheet.
- 23. Carefully place the trout on the baking sheet.
- 24. Bake the trout in the oven for 30 minutes.
- 25. Line a serving plate with lettuce leaves.
- 26. Arrange the baked trout on the plate.
- 27. Whisk Creme Fraîche with mustard and horseradish.
- 28. Serve the sauce alongside the fish.
