  1. 1. Rinse the trout thoroughly and pat it dry with a kitchen towel.
  2. 2. Drizzle lemon juice over the entire surface of the fish.
  3. 3. Season the fish inside and out with salt and pepper.
  4. 4. Let the puff pastry thaw at room temperature.
  5. 5. Wash the parsley and shake it dry.
  6. 6. Finely chop the parsley.
  7. 7. Melt the butter in a small pan.
  8. 8. Mix the melted butter with the chopped parsley.
  9. 9. Brush the trout inside and out with the parsley butter.
  10. 10. Preheat the oven to 200 degrees Celsius.
  11. 11. Sprinkle some flour on a work surface.
  12. 12. Roll out the puff pastry thinly.
  13. 13. Place the trout on the pastry.
  14. 14. Wrap the pastry completely around the fish.
  15. 15. Set aside about a quarter of the remaining pastry for decoration.
  16. 16. Seal the pastry seams with a little water.
  17. 17. Whisk the egg yolk with the milk.
  18. 18. Brush half of the wrapped trout with the egg yolk and milk mixture.
  19. 19. Cut out small circles with a diameter of about 5 cm from the remaining pastry.
  20. 20. Place the pastry circles on the trout in a scale-like pattern.
  21. 21. Brush the pastry circles with the remaining egg yolk and milk mixture.
  22. 22. Grease a baking sheet.
  23. 23. Carefully place the trout on the baking sheet.
  24. 24. Bake the trout in the oven for 30 minutes.
  25. 25. Line a serving plate with lettuce leaves.
  26. 26. Arrange the baked trout on the plate.
  27. 27. Whisk Creme Fraîche with mustard and horseradish.
  28. 28. Serve the sauce alongside the fish.
