  6. 6. Wash the carrots and peel them.
  7. 7. Cut the carrots into small pieces.
  8. 8. Wash the celery and the leek.
  9. 9. Slice the celery into rounds.
  10. 10. Cut the leek into strips.
  11. 11. Peel the shallots.
  12. 12. Cut the shallots lengthwise into thin wedges.
  13. 13. Peel the garlic.
  14. 14. Slice the garlic finely.
  15. 15. Heat the oil in a casserole dish.
  16. 16. Add the carrots and celery to the casserole.
  17. 17. Fry the vegetables vigorously while stirring.
  18. 18. Add the leek, shallots, and garlic.
  19. 19. Simmer the vegetables for another 2 minutes.
  20. 20. Season the mixture with salt and pepper.

  22. 22. Deglaze the vegetables with wine.
