🍽️ Tender Fish on Steamed Vegetables

Ingredients
- 800 g thick fish fillet (e.g. cod, pollock...)
- salt
- pepper (from the mill)
- 2 tbsp lemon juice
- 300 g carrots
- 200 g celery stalks
- 2 stalks leeks
- 4 shallots
- 2 garlic cloves
- 2 tbsp olive oil
- 2 bay leaves
- 200 ml dry white wine
- thyme leaves
Instructions
- 1. Rinse the fish fillets under cold water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Divide the fillets into four equal portions.
- 4. Season the fish pieces with salt and pepper.
- 5. Drizzle the fish with lemon juice.
- 6. Wash the carrots and peel them.
- 7. Cut the carrots into small pieces.
- 8. Wash the celery and the leek.
- 9. Slice the celery into rounds.
- 10. Cut the leek into strips.
- 11. Peel the shallots.
- 12. Cut the shallots lengthwise into thin wedges.
- 13. Peel the garlic.
- 14. Slice the garlic finely.
- 15. Heat the oil in a casserole dish.
- 16. Add the carrots and celery to the casserole.
- 17. Fry the vegetables vigorously while stirring.
- 18. Add the leek, shallots, and garlic.
- 19. Simmer the vegetables for another 2 minutes.
- 20. Season the mixture with salt and pepper.
- 21. Add the bay leaves.
- 22. Deglaze the vegetables with wine.
- 23. Bring the liquid to a boil.
- 24. Cover the casserole.
- 25. Let the vegetables simmer for about 10 minutes.
- 26. Place the fish pieces on top of the vegetables.
- 27. Cover the casserole again.
- 28. Cook the fish for about 10 minutes.
- 29. Sprinkle the finished dish with thyme.
- 30. Serve the dish warm.
