  1. 1. Peel the carrots, wash them, and grate them coarsely. Wash the bell pepper, remove the inside, and cut it into thin strips. Wash the spinach and dry it thoroughly.
  2. 2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and stir in lemon juice. Roughly chop the pumpkin seeds.
  3. 3. Spread each wrap thinly with hummus and distribute the avocado mixture on top. Top with the grated carrots, bell pepper strips, and spinach. Sprinkle one tablespoon of chopped pumpkin seeds over each.
  4. 4. Roll the wraps tightly, cut them into small pieces, and serve them on a large plate.
