  3. 3. Finely chop the mint and basil leaves.
  4. 4. Place the chopped cheese, herbs, lemon zest, olive oil, salt, and pepper in a bowl.
  5. 5. Mix the ingredients gently.
  6. 6. Be sparing with salt, as the feta cheese is already salty.
  7. 7. Cut the phyllo dough into 12 squares.
  8. 8. Each square should be approximately 15 by 15 centimeters.
  9. 9. Place a portion of the filling on each square.
  10. 10. Brush the edges of the dough squares with a little water.
  11. 11. Fold the sides of the dough over the filling.
  12. 12. Roll up the dough packages.
  13. 13. You can roll them crosswise or towards the tip.
  14. 14. Press the edges firmly so that the rolls stay closed when frying.
  15. 15. Heat plenty of oil in a pan.
  16. 16. Fry the rolls in batches.
  17. 17. Fry them for about 4 to 5 minutes until golden brown.
