🍽️ Juicy Filet Steaks with a Fruity Onion and Tomato Sauce

Ingredients
- 4 Beef Filet Mignon Steaks (approx. 160 - 180 g each)
- 1 tbsp Ghee
- 500 g Tomatoes
- 1 bunch Spring Onions
- 2 tbsp Butter
- 0.125 l Red Wine
- 1 bunch Parsley
- Salt
- Pepper (from the mill)
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Immediately shock the tomatoes with cold water.
- 3. Peel the skin off the tomatoes.
- 4. Cut the tomatoes into quarters.
- 5. Remove the seeds from the fruit flesh.
- 6. Finely chop the tomato flesh.
- 7. Clean and wash the spring onions.
- 8. Slice the spring onions into thin rings.
- 9. Melt the butter in a pan.
- 10. Sauté the spring onion rings in the butter.
- 11. Finely chop the parsley.
- 12. Stir the parsley into the onions.
- 13. Deglaze the mixture with red wine.
- 14. Let the sauce come to a brief boil.
- 15. Stir in the chopped tomato flesh.
- 16. Season the sauce with salt and pepper.
- 17. Salt the filet steaks generously.
- 18. Pepper the filet steaks freshly.
- 19. Heat ghee (clarified butter) in a frying pan.
- 20. Sear the steaks for 2 to 3 minutes on each side.
- 21. Remove the steaks from the pan.
- 22. Wrap the steaks in aluminum foil.
- 23. Let the steaks rest briefly in the foil.
- 24. Plate the steaks.
- 25. Grind fresh pepper over the steaks.
- 26. Serve the steaks with the onion-tomato sauce.
