🍽️ Juicy Beef Filet Steaks with Fresh Herb Sauce

Ingredients
- 360 g Steak (2 Steaks)
- 1 Garlic Clove
- 20 ml Sherry
- 1 TSP finely chopped Parsley
- 1 TSP finely chopped Thyme
- 150 ml Beef Broth
- 1 TSP Butter
- Salt
- Pepper (from the mill)
- 2 TSP Oil
- 6 Cocktail Tomatoes
Instructions
- 1. Heat a frying pan with some oil.
- 2. Season the beef filet steaks generously with salt and pepper.
- 3. Fry the steaks in the pan over medium heat.
- 4. Turn the steaks several times so they brown evenly.
- 5. Cook the steaks for a total of about 8 minutes.
- 6. Adjust the cooking time to your personal preference.
- 7. Remove the cooked steaks from the pan.
- 8. Let the steaks rest for a short while.
- 9. Wash the tomatoes under running water.
- 10. Peel the garlic clove.
- 11. Mince the garlic very finely.
- 12. Add the minced garlic to the pan drippings.
- 13. Sauté the garlic briefly.
- 14. Deglaze the pan with cognac.
- 15. Pour in the meat broth.
- 16. Add the tomatoes to the sauce.
- 17. Let the sauce reduce slightly.
- 18. Stir in the fresh herbs.
- 19. Season the sauce with salt and pepper to taste.
- 20. Remove the pan from the heat.
- 21. Stir in the cold butter until it has melted.
- 22. Serve the steaks with the herb sauce and tomatoes.
- 23. Add leaf salad if desired.
