🍽️ Juicy Filet Mignon in Creamy Whisky Sauce

Ingredients
- 4 beef filet steaks (200 g each, about 4 cm thick)
- salt
- pepper from the mill
- 2 tbsp peanut oil
- 4 tbsp whisky
- 30 g butter
- 150 ml whipping cream
- 125 g crème fraîche
- a few dashes Worcestershire sauce
- a few dashes lemon juice
- to taste herbs and lemons (for garnish)
Instructions
- 1. Season the filet steaks generously with salt and pepper.
- 2. Heat peanut oil in a large pan.
- 3. Sear the steaks on high heat for 2 minutes on each side.
- 4. Reduce the heat and cook the steaks for another 6 to 8 minutes.
- 5. Turn the steaks occasionally during this time.
- 6. Remove the steaks from the pan and wrap them tightly in aluminum foil.
- 7. Let the wrapped steaks rest for 5 minutes.
- 8. Deglaze the pan drippings with whisky.
- 9. Stir in butter, cream, and crème fraîche into the sauce.
- 10. Let the sauce simmer gently for 3 to 5 minutes.
- 11. Season the sauce with Worcestershire sauce, lemon juice, salt, and pepper.
- 12. Remove the steaks from the foil and add the released meat juices to the sauce.
- 13. Pour the sauce over the steaks and serve.
- 14. Garnish the dish with fresh herbs and lemon slices if desired.
