  1. 1. Fill a large pot with plenty of water and bring it to a boil.
  2. 2. Place the first lobster head-first into the boiling water.
  3. 3. Cook the lobster for about 15 minutes over gentle heat.
  4. 4. Remove the lobster from the water and let it cool down briefly.
  5. 5. Repeat the process with the second lobster.
  6. 6. Make sure that frozen lobsters are completely thawed before cooking.
  7. 7. Hold the cooked lobster firmly by the carapace with your left hand.
  8. 8. Separate the claws from the body one by one by twisting them.
  9. 9. Hold the lobster body with both hands.
  10. 10. Bend the tail upwards or downwards until it detaches from the body.
  11. 11. Push the meat out of the tail using both thumbs.
  12. 12. Remove the black vein from the tail meat.
  13. 13. Repeat the meat removal process for the second lobster.
  14. 14. Bend the smaller lower claw pincer.
  15. 15. Twist off the lower segment of the claw.
  16. 16. Pull the segment apart and remove the meat.
  17. 17. Place the large claw piece upright on a work surface.
  18. 18. Strike the thick end of the shell with a heavy knife to create a crack.
  19. 19. Carefully pull the meat out of the broken claw.
  20. 20. Peel the shallot and chop it finely.
  21. 21. Sauté the shallots in hot butter in a pot until translucent.
  22. 22. Dust the shallots with flour.
  23. 23. Lightly brown the flour while stirring.
  24. 24. Pour Madeira and cream into the pot.
  25. 25. Bring the sauce to a boil.
  26. 26. Simmer the sauce while stirring for about 10 minutes.
  27. 27. Wash and clean the leek.
  28. 28. Cut the light green and white parts of the leek into strips.
  29. 29. Blanch the leek strips for 3 minutes in boiling salted water.
  30. 30. Drain the leek and let it drain well.
  31. 31. Press the filet steaks slightly flat.
  32. 32. Fry the steaks in hot butter fat for about 3 to 5 minutes.
  33. 33. Adjust the cooking time to your personal preference.
  34. 34. Season the steaks with salt and pepper.
  35. 35. Wrap the steaks in aluminum foil.
  36. 36. Let the steaks rest in the foil for a few minutes.
  37. 37. Strain the sauce through a fine sieve.
  38. 38. Pour the strained sauce back into the pot.
  39. 39. Warm the sauce for a few more minutes.
  40. 40. Season the sauce with salt and cayenne pepper.
  41. 41. Whip the sauce with a hand blender before serving.
  42. 42. Plate the sauce on dishes.
  43. 43. Place the leek on the sauce.
  44. 44. Place the lobster meat and steaks on top.
