  1. 1. Thoroughly wash the radicchio under running water.
  2. 2. Shake the vegetable dry.
  3. 3. Tear the leaves into small, edible pieces.
  4. 4. Put vinegar, honey, mustard, salt, and pepper into a bowl.
  5. 5. Stir the ingredients for the dressing well together.
  6. 6. Stir in the oil until everything is well mixed.
  7. 7. Crush peppercorns and allspice berries in a mortar to make a coarse powder.
  8. 8. Spread the spice mixture on a cutting board.
  9. 9. Roll the meat pieces in the spices so they are coated all over.
  10. 10. Press the spice firmly onto the meat.
  11. 11. Peel the garlic cloves.
  12. 12. Cut the garlic cloves into quarters.
  13. 13. Heat the oil in a pan.
  14. 14. Fry the garlic until golden brown.
  15. 15. Remove the garlic from the pan and set it aside.
  16. 16. Sear the steaks in the hot fat for one minute on each side.
  17. 17. Reduce the heat of the pan.
  18. 18. Cook the meat for another 2 to 4 minutes per side.

  21. 21. Wrap the steaks in aluminum foil.

  24. 24. Mix the salad well with the dressing.
  25. 25. Arrange the salad on rustic wooden boards or a large platter.
  26. 26. Place one filet steak on top of the salad.
  27. 27. Serve the dish immediately.
