🍽️ Zander fillets with apricot chutney

Ingredients
- 200 g dried apricots
- 2 shallots
- 1 tbsp butter
- 1 tbsp honey
- 100 ml orange juice
- 1 tbsp lemon juice
- salt
- 720 g zander fillet ready for cooking (4 pieces)
- pepper (from the mill)
- 2 tbsp flour
- 3 tbsp vegetable oil
- 2 tbsp freshly chopped coriander leaves
Instructions
- 1. Finely chop the dried apricots.
- 2. Peel the shallots and dice them finely.
- 3. Heat butter in a pan.
- 4. Sauté the shallots and apricots briefly in the hot butter.
- 5. Stir in the honey and orange juice.
- 6. Simmer the sauce covered on low heat for approx. 10 minutes.
- 7. Add a little water if the sauce becomes too thick.
- 8. The sauce should have a chutney-like consistency.
- 9. Season the sauce with lemon juice and salt.
- 10. Wash the zander fillets and pat them dry.
- 11. Season the fillets with salt and pepper.
- 12. Coat the fillets in flour.
- 13. Heat oil in a frying pan.
- 14. Fry the zander fillets on the skin side for 4-5 minutes until golden brown.
- 15. Turn the fillets over.
- 16. Remove the pan from the heat.
- 17. Let the fillets finish cooking in the residual heat.
- 18. Plate the zander.
- 19. Spoon the apricot chutney over the fillets.
- 20. Garnish the dish with fresh coriander.
- 21. Serve the dish immediately.
