  1. 1. Finely chop the dried apricots.
  2. 2. Peel the shallots and dice them finely.
  3. 3. Heat butter in a pan.
  4. 4. Sauté the shallots and apricots briefly in the hot butter.
  5. 5. Stir in the honey and orange juice.
  6. 6. Simmer the sauce covered on low heat for approx. 10 minutes.
  7. 7. Add a little water if the sauce becomes too thick.
  8. 8. The sauce should have a chutney-like consistency.
  9. 9. Season the sauce with lemon juice and salt.
  10. 10. Wash the zander fillets and pat them dry.
  11. 11. Season the fillets with salt and pepper.
  12. 12. Coat the fillets in flour.
  13. 13. Heat oil in a frying pan.
  14. 14. Fry the zander fillets on the skin side for 4-5 minutes until golden brown.
  15. 15. Turn the fillets over.
  16. 16. Remove the pan from the heat.
  17. 17. Let the fillets finish cooking in the residual heat.
  18. 18. Plate the zander.
  19. 19. Spoon the apricot chutney over the fillets.
  20. 20. Garnish the dish with fresh coriander.
  21. 21. Serve the dish immediately.
