🍽️ Tender wild boar fillet with crisp vegetables

Ingredients
- 4 pieces Wild boar fillet (approx. 200 g each)
- 500 g green beans
- 500 g baby carrots
- 6 spring onions
- 4 tbsp butter
- 100 ml vegetable broth
- 100 ml whipping cream
- 1 tbsp paprika powder
- salt
- cayenne pepper
Instructions
- 1. Rinse the wild boar fillets under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Season the meat generously with paprika powder, salt, and cayenne pepper.
- 4. Heat two tablespoons of butter in a pan, but ensure it does not get too hot.
- 5. Sear the meat on all sides in the butter.
- 6. Preheat the oven to 140 degrees Celsius and set it to top and bottom heat.
- 7. Place the meat in the oven and bake it for about 12 to 15 minutes.
- 8. Wash the beans and the carrots thoroughly.
- 9. Clean the beans and the carrots.
- 10. Wash the spring onions and clean them.
- 11. Cut the spring onions into pieces about four centimeters long.
- 12. Sauté all the prepared vegetables in the remaining butter.
- 13. Ensure that the vegetables do not change color and do not brown.
- 14. Deglaze the vegetables with broth.
- 15. Let the liquid reduce for about two minutes.
- 16. Add the cream.
- 17. Simmer the sauce for about two more minutes until it becomes creamy.
- 18. Ensure that the vegetables remain crisp-tender during this process.
- 19. Season the sauce with salt and cayenne pepper.
- 20. Arrange the vegetables on pre-warmed plates.
- 21. Slice the cooked meat into thin pieces.
- 22. Place the meat slices on top of the arranged vegetables.
- 23. Serve the dish immediately.
