🍽️ Tender Pork Fillet with Potato and Pear Stew

Ingredients
- 600 g firm-cooking potatoes
- 4 pears
- 1 shallot
- 2 garlic cloves
- 4 slices pork fillet (approx. 140 g each)
- 2 tbsp olive oil
- 100 ml dry white wine
- 100 ml vegetable broth
- 1 tbsp coarse-grained mustard
- 1 tsp honey
- 2 sprigs thyme
- salt
- pepper (from the mill)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes in salted water until tender.
- 3. Peel the cooked potatoes.
- 4. Cut the potatoes into quarters.
- 5. Wash the pears.
- 6. Halve the pears.
- 7. Core the pear halves.
- 8. Cut the pears into wedges.
- 9. Peel the shallot.
- 10. Peel the garlic.
- 11. Dice the shallot.
- 12. Slice the garlic into thin pieces.
- 13. Rinse the pork fillets under cold water.
- 14. Pat the fillets dry with kitchen paper.
- 15. Season the fillets with salt and pepper.
- 16. Heat oil in a pan.
- 17. Sear the fillets on all sides in hot oil.
- 18. Remove the fillets from the pan and set them aside.
- 19. Add the diced shallots and garlic slices to the pan.
- 20. Sauté the vegetables until golden brown.
- 21. Add the potatoes and pears to the pan.
- 22. Deglaze the pan with wine.
- 23. Add broth.
- 24. Stir in mustard, honey, and thyme.
- 25. Place the pork fillets back into the pan.
- 26. Cover the pan.
- 27. Let the meat cook gently for about 5 minutes.
- 28. Plate the meat, potatoes, and pears.
- 29. Bring the sauce to a brief boil to thicken it.
- 30. Season the sauce with salt and pepper to taste.
