  1. 1. Place the spruce tips (do not wash!) and the thyme in a pot and add 750 ml of water. Simmer the mixture with the lid on until the needles have turned whitish.
  2. 2. Strain the liquid through a piece of muslin cloth and return it to the pot. Stir in the sugar and lemon juice. Cook the mixture down to a thick syrup, stirring occasionally. Remove the pot from the heat and let it cool uncovered for 10 to 15 minutes.
  3. 3. Fill the spruce tip honey into jars that have been rinsed with hot water. Optionally, place the boiled spruce needles on top for decoration or simply seal the jars.
