  1. 1. Cut the feta cheese lengthwise into sticks about 2 centimeters thick. Cut the puff pastry into 2-centimeter-wide strips. Wrap each feta stick with a puff pastry strip. Brush the surface with egg yolk and sprinkle with sesame seeds.
  2. 2. Place the feta sticks on a baking sheet lined with baking paper. Bake them in the preheated oven at 220 degrees conventional heat (convection 200 degrees or gas mark 3-4) for about 10 minutes until golden brown.
  3. 3. Meanwhile, peel the garlic cloves and chop them finely. Stir the garlic into the pumpkin puree, yogurt, and honey to create a creamy sauce. Season the dip with salt, pepper, and thyme. Serve the feta sticks with the pumpkin dip.
