🍰 Herb Feta Cake with Yeast Dough

Ingredients
- 400 g flour
- 0.5 tsp salt
- 21 g yeast (0.5 cube)
- 3 tbsp olive oil
- 50 g chopped walnuts
- 1 egg
- 200 g feta
- 50 g grated mountain cheese
- 100 g quark
- 200 ml whipping cream
- 2 eggs
- 1 tbsp herbs of Provence
- salt
- pepper (from the mill)
- olive oil (for the pan)
- flour (for working)
- 1 egg yolk (for brushing)
Instructions
- 1. Dissolve the yeast in about 200 milliliters of lukewarm water.
- 2. Mix the flour with the salt and nuts in a bowl.
- 3. Add the yeast mixture, olive oil, and egg to the flour mixture.
- 4. Knead everything with the dough hooks of the hand mixer until smooth.
- 5. Let the dough rise covered in a warm place for about 45 minutes.
- 6. Crumble the feta into a separate bowl.
- 7. Add the mountain cheese, quark, cream, eggs, and Provençal herbs.
- 8. Stir the filling until smooth and season with salt and pepper.
- 9. Preheat the oven to 160 degrees Celsius fan mode.
- 10. Divide the yeast dough into two halves.
- 11. Roll out the first half on a floured surface.
- 12. Place the dough in the oiled tart pan and form a crust edge.
- 13. Spread the filling onto the dough and smooth it out.
- 14. Divide the second half of the dough into two parts again.
- 15. Roll out one of these parts and place it as a lid on the filling.
- 16. Press the edges of the lid firmly.
- 17. Shape any decorations from the remaining dough.
- 18. Place the decorations on the dough lid.
- 19. Brush the dough lid with egg yolk.
- 20. Bake the cake for about 1 hour until golden brown in the preheated oven.
- 21. Cover the cake with aluminum foil if it becomes too dark.
- 22. Remove the cake from the oven and let it cool slightly.
- 23. Release the cake from the pan.
- 24. Serve the cake lukewarm or cold.
