Ingredients
- 2 medium-sized zucchini
- salt
- pepper (from the mill)
- olive oil (for frying)
- 250 g sheep's milk cheese (feta)
- rosemary (tips)
- olive oil (for serving)
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Slice the zucchini lengthwise into ten very thin slices.
- 3. Heat some oil in a pan.
- 4. Fry the zucchini slices in batches on both sides for a short time.
- 5. Cook them until they are lightly browned.
- 6. Season the slices with salt and pepper.
- 7. Remove the slices from the pan.
- 8. Place them on kitchen paper.
- 9. Let the excess fat be absorbed.
- 10. Let the slices cool down.
- 11. Cut the feta into 20 small, even cubes.
- 12. Wrap each piece of cheese in a zucchini slice.
- 13. Insert a sprig of rosemary through the roll.
- 14. Secure the roll with it.
- 15. Drizzle some olive oil onto your plates.
- 16. Arrange the zucchini rolls on top.
- 17. Serve the dish with white bread.
