🍽️ Grilled Vegetable and Feta Sandwich

Ingredients
- 1 large red onion
- 100 g cherry tomatoes
- 2 beef tomatoes
- 1 eggplant
- salt
- 1 bunch arugula
- olive oil
- pepper (from the mill)
- 4 sesame rolls
- 200 g feta
Instructions
- 1. Peel the onions and slice them into thin rings.
- 2. Wash the tomatoes thoroughly.
- 3. Remove the hard stem base from the beefsteak tomatoes.
- 4. Slice the beefsteak tomatoes into thick rounds.
- 5. Wash the eggplant and cut it into 1 cm thick slices.
- 6. Sprinkle the eggplant slices with salt.
- 7. Let the salted eggplant slices sit for about 20 minutes.
- 8. Then pat the eggplant slices dry with a kitchen towel.
- 9. Rinse the arugula under cold water.
- 10. Remove any thick stems or wilted leaves from the arugula.
- 11. Dry the arugula, for example using a salad spinner.
- 12. Preheat your grill to the desired temperature.
- 13. Place the prepared vegetables in an aluminum foil tray that you have greased with a little oil.
- 14. Season the vegetables with salt and pepper to taste.
- 15. Drizzle a little olive oil over the vegetables.
- 16. Place the tray with the vegetables on the hot grill.
- 17. Grill the vegetables until golden brown on all sides.
- 18. Turn the vegetables occasionally to ensure even cooking.
- 19. Slice the buns horizontally.
- 20. Place the bun halves on the grill.
- 21. Toast the buns until golden brown.
- 22. Crumble the feta cheese into coarse pieces.
- 23. Place the arugula and grilled vegetables on the bottom half of the buns.
- 24. Distribute the crumbled feta pieces on top.
- 25. Place the top bun half on the filling at an angle.
- 26. Secure the sandwich with a wooden skewer if desired.
