🍽️ Roasted Leek with Feta, Chickpeas, and Fresh Orange Dip

Ingredients
- 2 stalks leek
- 4 tbsp olive oil
- salt
- pepper
- 265 g chickpeas (can; drained weight)
- 300 g feta (9% fat)
- chili flakes
- 2 oranges
- 0.5 bunch cilantro (10 g)
Instructions
- 1. Wash the leek thoroughly and remove the tough outer leaves.
- 2. Cut the leek in half lengthwise.
- 3. Cut the leek halves into pieces about 10 centimeters long.
- 4. Place the leek pieces side by side in a baking dish.
- 5. Drizzle 2 tablespoons of oil over the leek.
- 6. Season the leek with a pinch of salt and black pepper.
- 7. Rinse the chickpeas under cold water and drain them well.
- 8. Spread the chickpeas evenly over the leek.
- 9. Cut the feta cheese into 8 equal cubes.
- 10. Place the feta cubes on top of the leek and chickpeas.
- 11. Sprinkle chili flakes over the feta.
- 12. Preheat the oven to 200 degrees (180 degrees for fan-assisted or gas mark 3).
- 13. Bake the dish in the oven for 15 to 20 minutes.
- 14. Peel the oranges and remove the white pith.
- 15. Cut the orange flesh into small cubes.
- 16. Wash the fresh coriander and shake it dry.
- 17. Finely chop the coriander leaves.
- 18. Mix the remaining oil with the orange cubes and the coriander.
- 19. Season the orange mixture with salt and pepper.
- 20. Take the roasted leek with feta out of the oven.
- 21. Top with the orange salsa.
