  1. 1. Wash the fennel thoroughly and remove the tough cores.
  2. 2. Slice the fennel into thin rounds.
  3. 3. Wash the snow peas.
  4. 4. Bring water with some salt to a boil.
  5. 5. Cook the snow peas for 5 minutes in the boiling salted water (blanching).
  6. 6. Peel the oranges and remove the white pith.
  7. 7. Slice the orange flesh into thin segments.
  8. 8. Combine the fennel, snow peas, and orange slices in a bowl.
  9. 9. Sprinkle sesame seeds over the mixture.
  10. 10. Drizzle 2 tablespoons of olive oil over it.
  11. 11. Whisk 4 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, puréed tomatoes, and mustard together in a small bowl for the dressing.
  12. 12. Season the dressing with salt and pepper to taste.
  13. 13. Pour the dressing over the salad.
  14. 14. Serve the salad with freshly toasted bread.
