🍽️ Fresh Fennel-Orange Salad with Tomato-Mustard Dressing

Ingredients
- 2 bulbs fennel
- 200 g snow peas
- 2 oranges
- 1 tbsp sesame seeds
- olive oil (cold pressed)
- balsamic vinegar
- salt
- pepper (freshly ground)
- 4 tbsp pureed tomatoes
- 2 tsp sweet mustard
Instructions
- 1. Wash the fennel thoroughly and remove the tough cores.
- 2. Slice the fennel into thin rounds.
- 3. Wash the snow peas.
- 4. Bring water with some salt to a boil.
- 5. Cook the snow peas for 5 minutes in the boiling salted water (blanching).
- 6. Peel the oranges and remove the white pith.
- 7. Slice the orange flesh into thin segments.
- 8. Combine the fennel, snow peas, and orange slices in a bowl.
- 9. Sprinkle sesame seeds over the mixture.
- 10. Drizzle 2 tablespoons of olive oil over it.
- 11. Whisk 4 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, puréed tomatoes, and mustard together in a small bowl for the dressing.
- 12. Season the dressing with salt and pepper to taste.
- 13. Pour the dressing over the salad.
- 14. Serve the salad with freshly toasted bread.
