  2. 2. Cut the fennel in half.
  3. 3. Remove the hard bottom core and the green leaves.
  4. 4. Slice the fennel flesh into very thin slices or use a mandoline.
  5. 5. Arrange the fennel slices and salami pieces on the plates.
  6. 6. Peel the garlic cloves and chop them finely.
  7. 7. Slice one lemon and one orange into thin rounds.
  8. 8. Squeeze the juice from the remaining two citrus fruits.
  9. 9. Whisk the juice together with the chopped garlic, mustard, and honey.
  10. 10. Season the dressing with salt and pepper to taste.
  11. 11. Garnish the plates with the citrus slices.
  12. 12. Drizzle the dressing over the salad.
  13. 13. Sprinkle the salad with the fennel leaves removed earlier.
