🍽️ Fresh Fennel and Salami Salad with Citrus Dressing

Ingredients
- 2 bulbs fennel
- 75 g Italian salami (in thin slices)
- 2 garlic cloves
- 2 unwaxed lemons
- 2 unwaxed oranges
- 1 tsp hot mustard
- 1 tsp honey
- salt
- pepper
- 3 tbsp olive oil
Instructions
- 1. Thoroughly wash the fennel under running water.
- 2. Cut the fennel in half.
- 3. Remove the hard bottom core and the green leaves.
- 4. Slice the fennel flesh into very thin slices or use a mandoline.
- 5. Arrange the fennel slices and salami pieces on the plates.
- 6. Peel the garlic cloves and chop them finely.
- 7. Slice one lemon and one orange into thin rounds.
- 8. Squeeze the juice from the remaining two citrus fruits.
- 9. Whisk the juice together with the chopped garlic, mustard, and honey.
- 10. Season the dressing with salt and pepper to taste.
- 11. Garnish the plates with the citrus slices.
- 12. Drizzle the dressing over the salad.
- 13. Sprinkle the salad with the fennel leaves removed earlier.
- 14. Serve the salad immediately.
