🍽️ Crunchy Fennel and Raisin Salad

Ingredients
- 80 g raisins
- 75 ml apple juice
- 50 g sliced almonds (or almond slivers)
- 2 tbsp capers
- 1 red onion
- 1 kg fennel
- 1 handful parsley
- 1 lemon (juice)
- 4 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Pour the apple juice over the raisins and let them soak.
- 2. Toast the almonds in a pan without oil until golden brown and fragrant.
- 3. Remove the almonds from the pan and let them cool down completely.
- 4. Drain the capers and chop them finely.
- 5. Peel the onion and slice it into thin strips.
- 6. Wash the fennel, remove the tough cores, and slice it into thin strips.
- 7. Wash the parsley, shake off excess water, and pick off the leaves.
- 8. Whisk the lemon juice with olive oil, salt, and pepper to make a dressing.
- 9. Combine the fennel, soaked raisins, almonds, capers, onions, and parsley in a large bowl.
- 10. Pour the dressing over everything, mix well, and serve the salad.
