  2. 2. Cut off the hard bottom end of the fennel.
  3. 3. Remove the tough outer leaves from the fennel.
  4. 4. Set aside a few nice green fennel fronds for decoration.
  5. 5. Slice the rest of the fennel into very thin strips.
  6. 6. Peel the oranges completely until only the fruit flesh remains.
  7. 7. Slice the orange flesh into thin rounds.
  8. 8. Divide the fennel and oranges among the plates.
  9. 9. Arrange the ingredients nicely on the plates.
  10. 10. Put mayonnaise, yogurt, jam, and lime juice into a small bowl.
  11. 11. Mix the ingredients for the dressing well together.
  12. 12. Season the dressing to taste with salt.
  13. 13. Season the dressing to taste with cayenne pepper.
  14. 14. Pour the finished dressing over the salad.
  15. 15. Sprinkle the salad with the reserved fennel fronds.
