  1. 1. Thoroughly wash the fennel under running water.
  2. 2. Remove the hard base (the core) from the fennel.
  3. 3. Slice the fennel into very thin slices.
  4. 4. Also wash the celery stalk.
  5. 5. Slice the celery into thin slices.
  6. 6. Save the green celery leaves for later.
  7. 7. Place the sliced fennel and celery pieces into a large bowl.
  8. 8. Crumble the saved celery leaves and add them to the bowl as well.
  9. 9. Add oil, vinegar, orange juice, fresh herbs, salt, and pepper to the bowl.
  10. 10. Mix all ingredients thoroughly together.
  11. 11. Let the salad sit for about 20 minutes to allow the flavors to meld.
  12. 12. Taste the salad again and adjust seasoning if needed.
  13. 13. Fill the finished salad into small bowls.
  14. 14. Serve the salad immediately.
