🍽️ Fresh Fennel and Celery Salad

Ingredients
- 600 g fennel
- 1 stalk celery (with greens)
- 3 tbsp olive oil (30 g each)
- 2 tbsp white balsamic vinegar
- 2 tbsp orange juice
- 2 tbsp fresh chopped parsley
- 1 tbsp chive rings
- salt
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the fennel under running water.
- 2. Remove the hard base (the core) from the fennel.
- 3. Slice the fennel into very thin slices.
- 4. Also wash the celery stalk.
- 5. Slice the celery into thin slices.
- 6. Save the green celery leaves for later.
- 7. Place the sliced fennel and celery pieces into a large bowl.
- 8. Crumble the saved celery leaves and add them to the bowl as well.
- 9. Add oil, vinegar, orange juice, fresh herbs, salt, and pepper to the bowl.
- 10. Mix all ingredients thoroughly together.
- 11. Let the salad sit for about 20 minutes to allow the flavors to meld.
- 12. Taste the salad again and adjust seasoning if needed.
- 13. Fill the finished salad into small bowls.
- 14. Serve the salad immediately.
