🍽️ Tender Fennel Rings with Lemon Aroma

Ingredients
- 1 shallot
- 4 bulbs young fennel
- salt
- 2 tbsp olive oil
- 1 lemon
- 100 ml vegetable broth
- 0.5 tsp paprika powder
- 0.5 lime
- 8 sprigs thyme
- 0.5 bunch parsley
Instructions
- 1. Peel the shallot and slice it into thin rings.
- 2. Wash the fennel thoroughly.
- 3. Remove the hard bottom stalk, but leave a small piece so the leaves stay together.
- 4. Cut the fennel into slices or wedges about 5 millimeters thick.
- 5. Season the fennel with salt.
- 6. Heat oil in a large pan.
- 7. Fry the shallot rings and fennel for 2 to 3 minutes over high heat.
- 8. Squeeze out the lemon juice.
- 9. Add the lemon juice and broth to the pan.
- 10. Let the liquid bubble until it has reduced by half, for 1 to 2 minutes.
- 11. Reduce the heat to low.
- 12. Cover the pan.
- 13. Simmer the fennel until tender for about 5 minutes.
- 14. Plate the vegetable dish.
- 15. Sprinkle some paprika powder over it.
- 16. Garnish with lime slices, thyme sprigs, and fresh parsley.
- 17. Serve the dish immediately.
