  1. 1. Remove the tough outer leaves and the hard base from the fennel.
  2. 2. Rinse the fennel thoroughly under running water.
  3. 3. Cut the fennel bulb into even slices lengthwise.
  4. 4. Place the fennel slices on the hot table or charcoal grill.
  5. 5. Grill the fennel for 2 to 3 minutes on the first side.
  6. 6. Turn the slices and grill them for another 2 to 3 minutes on the other side.
  7. 7. Pull the needles off the rosemary sprigs.
  8. 8. Place the fresh rosemary needles directly between the hot fennel slices on the grill.
  9. 9. Drizzle some olive oil over the fennel.
  10. 10. Season the fennel to taste with salt and black pepper.
  11. 11. Remove the fennel from the grill and serve it immediately while warm.
