  1. 1. Thoroughly wash the fennel under running water.
  2. 2. Cut off the green fennel fronds and set them aside for the marinade.
  3. 3. Slice the fennel bulb into thin strips.
  4. 4. Peel the oranges thickly to remove all the white bitter pith.
  5. 5. Catch the released orange juice in a bowl.
  6. 6. Slice the orange flesh into thick rounds.
  7. 7. Arrange the fennel strips and orange pieces on the plates.
  8. 8. Finely chop the parsley and add it to the bowl with the orange juice.
  9. 9. Add vinegar, oil, salt, and pepper to the bowl.
  10. 10. Add a splash of lemon juice.
  11. 11. Stir the ingredients vigorously until a homogeneous marinade forms.
  12. 12. Pour the marinade evenly over the salad.
  13. 13. Sprinkle capers over the salad.
  14. 14. Serve the salad with crispy grissini, for example.
