🍽️ Fresh Fennel and Orange Salad

Ingredients
- 300 g fennel
- 2 untreated oranges
- 4 tbsp vegetable oil
- 2 tbsp white wine vinegar
- 2 tsp lemon juice
- 1 tbsp chopped parsley
- 2 tbsp small capers
- salt
- pepper
- grissini
Instructions
- 1. Thoroughly wash the fennel under running water.
- 2. Cut off the green fennel fronds and set them aside for the marinade.
- 3. Slice the fennel bulb into thin strips.
- 4. Peel the oranges thickly to remove all the white bitter pith.
- 5. Catch the released orange juice in a bowl.
- 6. Slice the orange flesh into thick rounds.
- 7. Arrange the fennel strips and orange pieces on the plates.
- 8. Finely chop the parsley and add it to the bowl with the orange juice.
- 9. Add vinegar, oil, salt, and pepper to the bowl.
- 10. Add a splash of lemon juice.
- 11. Stir the ingredients vigorously until a homogeneous marinade forms.
- 12. Pour the marinade evenly over the salad.
- 13. Sprinkle capers over the salad.
- 14. Serve the salad with crispy grissini, for example.
