🥗 Fresh Fennel-Orange Salad with Feta

Ingredients
- 150 g lamb's lettuce
- 1 bulb fennel
- 4 oranges
- 150 g black olives (pitted)
- 40 g dried tomatoes (without oil)
- 2 tbsp white balsamic vinegar
- 2 tbsp olive oil
- 2 tbsp walnut oil
- salt
- 1 tsp honey
- 100 g sheep's milk cheese
Instructions
- 1. Wash the corn salad thoroughly and spin it dry.
- 2. Wash the fennel, cut it in half, and remove the hard base.
- 3. Shred the fennel halves finely.
- 4. Peel three oranges completely so that no white pith remains.
- 5. Cut the peeled oranges into small pieces.
- 6. Squeeze the fourth orange to extract the juice.
- 7. Drain the olives and slice them into rings.
- 8. Finely chop the tomatoes.
- 9. Whisk the orange juice, vinegar, olive oil, and walnut oil together in a bowl.
- 10. Add the chopped tomatoes to the dressing mixture.
- 11. Add a pinch of salt and the honey, then whisk everything well.
- 12. Finally, taste and adjust the seasoning of the dressing.
- 13. Arrange the corn salad, fennel, and orange pieces on plates.
- 14. Add the olives to the other ingredients on the plates.
- 15. Drizzle the dressing over the salad.
- 16. Crumble the feta cheese and sprinkle it over the salad.
- 17. Serve the salad immediately.
