  1. 1. Wash the fennel thoroughly under running water.
  2. 2. Trim off the thin bottom part of the bulb.
  3. 3. Save the green fennel fronds for later.
  4. 4. Slice the fennel bulbs lengthwise into slices about 1 centimeter thick.
  5. 5. Make sure the slices remain attached at the base so they do not fall apart.
  6. 6. Wash the thyme.
  7. 7. Pluck the small leaves from the stems.
  8. 8. Add the thyme leaves to the seasoned olive oil.
  9. 9. Whisk the vinegar, sugar, and pepper together well.
  10. 10. Peel the garlic clove.
  11. 11. Press the garlic directly into the marinade.
  12. 12. Coat the fennel slices evenly with this marinade.
  13. 13. Place the fennel on the preheated grill.
  14. 14. Grill it, turning occasionally, for about 10 minutes.
  15. 15. Wait until the fennel is golden yellow.
  16. 16. Baste it with the marinade repeatedly during this time.
  17. 17. Remove the fennel pieces from the grill.
  18. 18. Serve immediately.
