  1. 1. Thoroughly wash the fennel under running water.
  2. 2. Let the water drain off the fennel.
  3. 3. Remove the tough bottom stalks and the outer leaves from the fennel.
  4. 4. Cut the pears in half.
  5. 5. Cut each pear half in half again.
  6. 6. Remove the core from the pear pieces.
  7. 7. Shred the fennel into very thin slices using a box grater.
  8. 8. Shred the pear pieces into thin slices as well.
  9. 9. Place the shredded fennel and pear pieces into a large bowl.
  10. 10. Squeeze the lime to extract the juice.
  11. 11. Drizzle the lime juice over the fruit and vegetables to your liking.
  12. 12. Wash the watercress under running water.
  13. 13. Shake the watercress dry to remove excess water.
  14. 14. Break the watercress into bite-sized pieces.
  15. 15. Add the watercress to the bowl with the fennel and pear.
  16. 16. Mix all ingredients thoroughly together.
  17. 17. Drizzle the salad with sesame oil.
  18. 18. Season the salad with salt to taste.
  19. 19. Season the salad with freshly ground pepper to taste.
  20. 20. Plate the salad.
