🍽️ Couscous with Fried Fennel, Pear, and Onion

Ingredients
- 250 ml classic vegetable broth
- 100 g couscous (instant)
- 1 red onion
- 1 bulb fennel
- 1 pear
- 2 tsp olive oil
- pepper
- 1 tsp brown sugar
- 1 tsp coriander seeds
- salt
- 100 g goat cheese
Instructions
- 1. Bring the vegetable broth to a boil in a pot.
- 2. Place the couscous in a bowl.
- 3. Pour the boiling broth over the couscous.
- 4. Let the couscous swell for about 8 minutes.
- 5. Peel the onion in the meantime.
- 6. Wash the fennel thoroughly.
- 7. Shake the fennel fronds dry.
- 8. Finely chop the fennel fronds.
- 9. Set the chopped greens aside.
- 10. Wash the pear.
- 11. Dry the pear.
- 12. Cut the pear into quarters.
- 13. Remove the core of the pear.
- 14. Slice the onion, fennel, and pear thinly.
- 15. Heat oil in a pan.
- 16. Add pepper, sugar, and coriander to the hot pan.
- 17. Toast the spices for about 1 minute over medium heat.
- 18. Add the slices of onion, fennel, and pear to the pan.
- 19. Fry the vegetables until golden brown for about 2 minutes.
- 20. Add the swollen couscous to the pan.
- 21. Mix everything gently.
- 22. Season with salt and pepper to taste.
- 23. Divide the dish onto plates.
- 24. Add goat cream cheese on top.
- 25. Garnish with the prepared fennel fronds.
