🍽️ Fennel-Apple Gratin

Ingredients
- 4 Apples (Elstar)
- 200 ml White wine
- 2 tsp Mustard seeds
- 1 tsp Fennel seeds
- Salt
- 150 g Alpine cheese (e.g. South Tyrolean pcs Vigil style)
- 1 bulb Fennel
- 1 tbsp Hazelnuts
Instructions
- 1. Rinse the apples, cut them in half, and remove the core using a melon baller. Pour the white wine into a pot with mustard seeds, fennel seeds, and salt, and let it simmer for 5 minutes. Place the apple halves in the wine broth and cook them gently until tender.
- 2. Carefully lift the apples out of the broth with a slotted spoon and place them in a baking dish. Pour a little of the cooking liquid over them. Cut the mountain cheese into cubes and tuck the pieces into the apples. Place the dish under the preheated grill until the cheese melts and turns golden brown.
- 3. Trim the fennel, rinse it, and cut it into thin strips. Roughly chop the hazelnuts. Sprinkle the gratinated apples with the fennel and hazelnuts, then serve the dish warm.
