🍽️ Classic French Mille-Feuille Potato Gratin

Ingredients
- 600 g potatoes (mostly waxy)
- salt
- pepper (from the mill)
- 250 ml sour cream
- 3 eggs
- paprika powder
- 0.25 bunch chives
- fats (for the dish)
Instructions
- 1. Boil the potatoes in their skins until they are tender.
- 2. Peel the cooled potatoes.
- 3. Slice the potatoes into very thin rounds.
- 4. Preheat the oven to 200 degrees Celsius.
- 5. Grease a baking dish with some fat.
- 6. Whisk the sour cream with the eggs in a bowl.
- 7. Season the mixture generously with salt and pepper.
- 8. Layer the potato slices and the egg cream alternately in the baking dish.
- 9. Finish the layers with a top layer of egg cream.
- 10. Bake the gratin for about 15 minutes until the cream has set.
- 11. Chop the chives into fine rings.
- 12. Carefully turn the finished gratin out of the dish.
- 13. Sprinkle it with the chives and fresh pepper.
- 14. Serve the dish immediately.
