🍰 Citrus Yoghurt Salad

Ingredients
- 1 Orange (or blood orange)
- 1 small grapefruit
- 1 large mandarin orange
- 4 kumquats
- 2 tbsp orange liqueur (or orange syrup)
- 1 small carambola
- 150 g Greek yogurt
- 250 g yogurt (3.5% fat)
- 0.5 vanilla pod
- 1 tbsp liquid honey
- 20 g pistachio kernels (1 heaped tbsp)
- 8 paper-thin dark chocolate bars (bittersweet)
Instructions
- 1. Peel the orange and grapefruit thickly. Remove all white pith completely.
- 2. Carefully cut out the fruit segments (filets) between the membranes.
- 3. Catch the dripping juice in a small bowl.
- 4. Peel the mandarin orange and remove the white pith.
- 5. Slice the mandarin orange into thick rounds.
- 6. Wash the kumquats thoroughly.
- 7. Dry the kumquats with a cloth.
- 8. Slice the kumquats into rounds as well.
- 9. Add the orange and grapefruit segments to the bowl with the juice.
- 10. Add the sliced kumquats.
- 11. Stir the orange liqueur or orange syrup into the fruit mixture.
- 12. Wash the starfruit (carambola) thoroughly.
- 13. Slice the starfruit into thin rounds.
- 14. Place both types of yoghurt into a separate bowl.
- 15. Stir the yoghurt until smooth and creamy.
- 16. Slice the vanilla pod lengthwise.
- 17. Scrape out the tiny black seeds (pulp) from the pod.
- 18. Stir the vanilla pulp and honey into the yoghurt.
- 19. Chop the pistachios coarsely using a large knife.
- 20. Layer the citrus fruit salad, yoghurt, and chocolate pieces into four glasses.
- 21. Garnish the glasses with starfruit slices and pistachios.
- 22. Serve the salad immediately.
