  1. 1. Peel the orange and grapefruit thickly. Remove all white pith completely.
  2. 2. Carefully cut out the fruit segments (filets) between the membranes.
  3. 3. Catch the dripping juice in a small bowl.
  4. 4. Peel the mandarin orange and remove the white pith.
  5. 5. Slice the mandarin orange into thick rounds.
  6. 6. Wash the kumquats thoroughly.
  7. 7. Dry the kumquats with a cloth.
  8. 8. Slice the kumquats into rounds as well.
  9. 9. Add the orange and grapefruit segments to the bowl with the juice.
  10. 10. Add the sliced kumquats.
  11. 11. Stir the orange liqueur or orange syrup into the fruit mixture.
  12. 12. Wash the starfruit (carambola) thoroughly.
  13. 13. Slice the starfruit into thin rounds.
  14. 14. Place both types of yoghurt into a separate bowl.
  15. 15. Stir the yoghurt until smooth and creamy.
  16. 16. Slice the vanilla pod lengthwise.
  17. 17. Scrape out the tiny black seeds (pulp) from the pod.
  18. 18. Stir the vanilla pulp and honey into the yoghurt.
  19. 19. Chop the pistachios coarsely using a large knife.
  20. 20. Layer the citrus fruit salad, yoghurt, and chocolate pieces into four glasses.
  21. 21. Garnish the glasses with starfruit slices and pistachios.
  22. 22. Serve the salad immediately.
