  1. 1. Put 200 grams of flour, 1 teaspoon of baking powder, and 40 grams of coconut blossom sugar into a bowl.
  2. 2. Add the egg white and the cold butter cut into small cubes.
  3. 3. Knead everything quickly into a smooth dough.
  4. 4. Shape the dough into a ball.
  5. 5. Wrap the dough ball tightly in cling film.
  6. 6. Put the foil-wrapped dough in the refrigerator for 30 minutes.
  7. 7. Lightly dust a work surface with flour.
  8. 8. Roll out the dough on the surface using a rolling pin.
  9. 9. Grease your cake pan with a little butter if desired.
  10. 10. Place the rolled-out dough into the pan.
  11. 11. Prick the bottom of the dough several times with a fork.
  12. 12. Peel the apples completely.
  13. 13. Cut the apples into eight equal pieces.
  14. 14. Remove the core from the apple pieces.
  15. 15. Wash the orange under hot water.
  16. 16. Dry the orange with a cloth.
  17. 17. Grate the orange zest finely.
  18. 18. Squeeze the juice from the orange.
  19. 19. Mix the apple pieces with the orange juice.
  20. 20. Separate the eggs by separating the yolk from the white.
  21. 21. Mix the egg yolks with 2 tablespoons of warm water.
  22. 22. Whip the egg whites with the remaining coconut blossom sugar until stiff.
  23. 23. Mix the egg yolk-water mixture with the remaining flour and baking powder.
  24. 24. Gently fold the stiffly whipped egg whites into the mixture.
  25. 25. Stir 2 teaspoons of orange zest into the batter.
  26. 26. Put half of the batter into the prepared pan.
  27. 27. Distribute the apple pieces evenly over the dough.
  28. 28. Cover the apples with the remaining batter.
  29. 29. Sprinkle almonds over the cake.
  30. 30. Preheat the oven to 180 degrees conventional heat (or 150 degrees convection or gas mark 2).
  31. 31. Bake the cake for about 45 minutes.
  32. 32. Take the cake out of the oven.
  33. 33. Let the cake cool down completely.
  34. 34. Dust the cooled cake with powdered sugar if desired.
