🍰 Juicy Apple-Orange Cake with Shortcrust Pastry

Ingredients
- 290 g wheat flour Type 1050
- 2 tsp baking powder
- 100 g coconut blossom sugar
- 1 egg white
- 125 g cold butter
- 1 kg apples
- 1 organic orange
- 6 eggs (size M)
- 4 tbsp sliced almonds
Instructions
- 1. Put 200 grams of flour, 1 teaspoon of baking powder, and 40 grams of coconut blossom sugar into a bowl.
- 2. Add the egg white and the cold butter cut into small cubes.
- 3. Knead everything quickly into a smooth dough.
- 4. Shape the dough into a ball.
- 5. Wrap the dough ball tightly in cling film.
- 6. Put the foil-wrapped dough in the refrigerator for 30 minutes.
- 7. Lightly dust a work surface with flour.
- 8. Roll out the dough on the surface using a rolling pin.
- 9. Grease your cake pan with a little butter if desired.
- 10. Place the rolled-out dough into the pan.
- 11. Prick the bottom of the dough several times with a fork.
- 12. Peel the apples completely.
- 13. Cut the apples into eight equal pieces.
- 14. Remove the core from the apple pieces.
- 15. Wash the orange under hot water.
- 16. Dry the orange with a cloth.
- 17. Grate the orange zest finely.
- 18. Squeeze the juice from the orange.
- 19. Mix the apple pieces with the orange juice.
- 20. Separate the eggs by separating the yolk from the white.
- 21. Mix the egg yolks with 2 tablespoons of warm water.
- 22. Whip the egg whites with the remaining coconut blossom sugar until stiff.
- 23. Mix the egg yolk-water mixture with the remaining flour and baking powder.
- 24. Gently fold the stiffly whipped egg whites into the mixture.
- 25. Stir 2 teaspoons of orange zest into the batter.
- 26. Put half of the batter into the prepared pan.
- 27. Distribute the apple pieces evenly over the dough.
- 28. Cover the apples with the remaining batter.
- 29. Sprinkle almonds over the cake.
- 30. Preheat the oven to 180 degrees conventional heat (or 150 degrees convection or gas mark 2).
- 31. Bake the cake for about 45 minutes.
- 32. Take the cake out of the oven.
- 33. Let the cake cool down completely.
- 34. Dust the cooled cake with powdered sugar if desired.
