🍽️ Crispy Frisée Salad with Bresaola

Ingredients
- 120 g small frisée lettuce (1 small frisée lettuce)
- 250 g Lollo bionda (1 Lollo bionda)
- 2 tbsp apple cider vinegar
- 2 tsp sweet mustard
- 2 tbsp Mediterranean vegetable broth
- 3 tbsp rapeseed oil
- salt
- pepper
- 1 bunch chives
- 60 g bresaola (in paper-thin slices)
Instructions
- 1. Rinse the frisée and lollo bionda lettuce heads under running water.
- 2. Dry the vegetables thoroughly using a salad spinner or a kitchen towel.
- 3. Tear or cut the leaves into bite-sized pieces.
- 4. Place the lettuce pieces into a large bowl.
- 5. Add vinegar, mustard, vegetable broth, and rapeseed oil to a small bowl.
- 6. Whisk the ingredients for the dressing vigorously with a wire whisk.
- 7. Season the dressing to taste with salt and pepper.
- 8. Wash the chives and shake off excess water.
- 9. Cut the chives into fine rings.
- 10. Stir the chive rings into the dressing.
- 11. Pour the dressing evenly over the salad.
- 12. Toss the salad gently until all leaves are coated.
- 13. Slice the bresaola into very thin slices.
- 14. Arrange the meat slices in a circle on flat plates.
- 15. Distribute the tossed salad over the meat slices.
- 16. Serve the salad immediately.
