  2. 2. Dry the vegetables thoroughly using a salad spinner or a kitchen towel.
  3. 3. Tear or cut the leaves into bite-sized pieces.
  4. 4. Place the lettuce pieces into a large bowl.
  5. 5. Add vinegar, mustard, vegetable broth, and rapeseed oil to a small bowl.
  6. 6. Whisk the ingredients for the dressing vigorously with a wire whisk.
  7. 7. Season the dressing to taste with salt and pepper.
  8. 8. Wash the chives and shake off excess water.
  9. 9. Cut the chives into fine rings.
  10. 10. Stir the chive rings into the dressing.
  11. 11. Pour the dressing evenly over the salad.
