🍽️ Fine Herb Soup

Ingredients
- 30 g Butter
- 100 g onions (finely chopped)
- 2 tbsp wheat flour (plain)
- 60 ml dry white wine
- 800 ml clear broth
- 125 g sour cream
- 1 tbsp parsley (finely chopped)
- 1 tbsp chives (cut into rings)
- 1 tbsp lovage (finely chopped)
- salt
- pepper (from the mill)
- nutmeg
Instructions
- 1. Heat butter in a pot.
- 2. Chop the onions finely and sauté them in the hot butter until translucent.
- 3. Dust the vegetables with flour.
- 4. Deglaze the mixture with white wine.
- 5. Pour in the broth.
- 6. Let the soup simmer for about 7 minutes.
- 7. Stir in the crème fraîche.
- 8. Blend the soup finely with a hand blender.
- 9. Wash the parsley, chives, and lovage (an herb plant).
- 10. Chop the herbs finely and add them to the soup.
- 11. Season the soup with salt, pepper, and nutmeg.
- 12. Pour the soup into bowls.
- 13. Garnish the bowls with dill flowers and fresh chives as desired.
