🍽️ Creamy Pea Soup with Feta and Dill

Ingredients
- 1 shallot
- 1 garlic clove
- 2 tbsp olive oil
- 300 g peas (frozen)
- 200 ml vegetable broth
- 4 sprigs dill
- 100 g feta
- 100 g whipping cream
- salt
- pepper
- chili flakes
- 1 tsp black sesame seeds
Instructions
- 1. Peel the shallot and the garlic.
- 2. Heat 1 tablespoon of oil in a pot.
- 3. Sauté the shallots and garlic over medium heat for 3 minutes.
- 4. Add the peas.
- 5. Sauté the peas for another 3 minutes.
- 6. Pour in the vegetable broth.
- 7. Let the soup simmer for about 5 minutes.
- 8. Wash the dill and shake it dry.
- 9. Tear the dill into small pieces.
- 10. Crumble the feta into small pieces.
- 11. Pour the cream into the soup.
- 12. Set aside half of the dill.
- 13. Puree the soup finely with a hand blender.
- 14. Season the soup with salt, pepper, and chili flakes.
- 15. Fill the soup into two bowls.
- 16. Sprinkle the remaining dill over the soup.
- 17. Sprinkle the feta over the soup.
- 18. Sprinkle sesame seeds over the soup.
- 19. Drizzle the remaining oil over the soup.
